Jerusalem is a place that has been at the centre of so many events – many religious – that we don’t feel like we need to delve into its history. It’s on the news almost every day, and the more things change there, the more they remain the same. We’ve done a number of posts about that part of the world, focusing on the location’s meaning, importance and, yes, troubles too. But, to dwell on Jerusalem’s issues is, in many ways, missing the point. It is a global city with a vibrant culture and warm and welcoming residents.
And, with the legacy that the city has, certainly one of the most important and vibrant is its cuisine. Having been a crossroads for various civilizations, including Jewish, Muslim, and Christian communities, as well as Armenian, Arab, and European influences. This fusion of cultures has led to a diverse range of ingredients, flavors, and cooking techniques. It incorporates ingredients and cooking styles from both regions, such as fresh herbs, olive oil, tahini, pomegranates, sumac, and spices like za’atar and cumin.
These recipes often use local and seasonal ingredients, and they are deeply rooted in cultural and religious practices. Examples include dishes like hummus, falafel, shawarma, tabbouleh, and various types of kebabs.
