We think it’s safe to say that most, if not all, of our erudite readers are always happy to eat Mexican food. As much as we love Taco Bell, there is nothing like the real thing, made by real Mexican cooks (and, ideally by someone’s madre.) And, the sheer number of dishes that grace the Mexican tables is surprisingly large – not just tacos and burritos.
There is evidence of the origins of Mexican food going back in history as far as 5,000 years ago – much of which still graces our tables. And, the variety, the boundless selection of ingredients and styles of cooking can boggle the mind of the uninitiated.
